5 Min Healthy Meal! Meno Friendly! Just what I needed!!

A Million Things on my TO DO list and now you are gonna add more and tell me to eat healthy??? ENTER CURSE WORD HERE... But Don't worry, this one will take 5 Minutes to prepare only. So you can maximize living your best life!


Crock Pot Garlic Herb Chicken with Sweet Potatoes & Carrots

Prep Time: 5 Minutes 🍽 Serves: 5

Ingredients:

  • 2 lbs boneless, skinless chicken thighs (or breasts if you prefer)

  • 3 medium sweet potatoes, chopped ( I personally leave my skin on two reasons, I'm lazy and there are lots of amazing nutrients in the skin, look below for health benefits of the skin/peel)

  • 4 large carrots, chopped

  • 1 small onion, roughly chopped (optional but adds flavor)

  • 4 cloves garlic, minced or whole (your call)

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 tsp paprika

  • ½ tsp sea salt (or to taste)

  • ¼ tsp black pepper

  • 1 ½ cups chicken bone broth (or regular broth)

  • 2 tbsp melted beef tallow or avocado oil (try avoiding seed oils)

  • Optional: juice of ½ lemon for a brightness boost at the end

Instructions:

  1. Dump & Go: Add sweet potatoes, carrots, and onion to the bottom of the crock pot.

  2. Layer: Place chicken on top of the veggies.

  3. Season: Sprinkle garlic, thyme, rosemary, paprika, salt, and pepper over the chicken.

  4. Pour: Drizzle oil and pour in the broth.

  5. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and veggies are soft.

  6. Optional Finish: Squeeze lemon juice over the top before serving.
